FERME Vifranc in Quebec produces Canada's finest organic maple syrup. The enterprise has been in the Pelletier family for more than eighty years and today is in the hands of the founder's great-grandson, Vital Pelletier. Maple trees, which can reach heights of 25-30 metres and live for more than 250 years, are tapped in spring according to a chart that determines a tree's eligibility by size and the number of holes that can be drilled in its trunk. In this way smaller trees are protected and keep growing safely. Trees cannot produce 'maple water' until they have reached 50 to 80 years of age.
